Peanut Butter Snickerdoodle Recipe

We all have recipes that we hold near to our hearts. Recipes that remind us of special moments like chocolate cake to remind us of birthdays, homemade ice cream to remind us of summer break or fresh baked bread that reminds us of the holidays. I have a few recipes in mind that remind me of certain things and one of them is snickerdoodles.


Growing up I would pretend to cook Krabby Patties with an imaginary grill and spatula until I was old enough to get my hands on real kitchen tools. One of the first recipes I attempted was snickerdoodles. I followed a recipe from a small cookbook that I got as a birthday gift…that I’m sure I can find somewhere if I just clean out my closet…anyways. I made cookies for my family who, looking back on it, probably pretended to love them and then turned their back to throw the dessert in the trash.


I have since reinvented that recipe I originally made years ago and added peanut butter to the recipe. I did this because, in my memory, peanut butter and chocolate kisses are what make snickerdoodles snickerdoodles. I was surprised when I began looking up snickerdoodle recipes to find that they are basically just sugar cookies rolled in cinnamon. So in order to bring back that nostalgia I created my own recipe - peanut butter and chocolate kissed included.

Peanut Butter Snickerdoodle Cookies

I must say, I think these came out perfect! I decided to add a special ingredient, peanut butter, since chocolate and peanut butter is my favorite combo. These cookies came out soft and chewy. Seriously perfect for bringing to a party, date night in or to make with kids. They can be stored on the countertop or fridge in a sealed container.

Prep Time: 20 min Cook Time: 15 min Total Time: 35 min

Ingredients

Dough:

  • 2 3/4 cups all-purpose flour
  • 2 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, at room temp
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup creamy peanut butter, melted

Topping:

  • 1/3 cup sugar
  • 2 tbsp cinnamon

Instructions

  1. Preheat oven to 350 F
  2. In large bowl, mix flour, cream of tartar, baking soda and salt
  3. Using mixer, mix butter and sugar until creamy. Add eggs and vanilla extract, blend again scrapping sides. Add peanut butter and blend
  4. until just mixed.
  5. Add dry ingredients to wet ingredients until just mixed.
  6. In a small bowl, combine topping ingredients.
  7. Using small scoop or spoon, form dough into balls and roll in topping until all sides are coated.
  8. Place dough balls 2 inches apart on baking sheet with parchment paper.
  9. Bake 10-12 minutes
  10. Remove from oven and place @hersheys kiss on top immediately
  11. Let cool 10-15 min
